Distillery Technician (FT)

Position Overview:

The Distillery Technician will have primary responsibility for the Museum’s beer brewing and moonshine distilling operations. These operations serve as part of the overall guest experience, with the distillery space serving as an exhibit within the Museum’s Prohibition Era experience, enabling guests to gain insight into the process of producing the illicit beverages which spawned the growth of Organized Crime in the 1920s and 30s. The Distillery Technician reports to the Director of Security and Business Integration.

Major Tasks and Responsibilities:

  • Responsible for all aspects of distilling moonshine and brewing beer, including loading and cooking grains, fermentation, distillation, brewing, gauging (diluting and proofing), bottling, labeling, packaging, raw materials inventory control, finished goods inventory control, cleaning, and maintenance. 
  • Ensures that beer and moonshine products are produced in accordance with established recipes and manufacturing / brewing processes.
  • Responsible for compliance with all regulatory requirements in production process, storage and recordkeeping.
  • Manages inventory of materials and supplies, including inventory tracking, ordering, rotation, cost control, etc.
  • Cleans and maintains in a properly organized manner all storage spaces dedicated to distillery operations.
  • Performs light maintenance on distillery equipment including mash tank, fermentation tank, pot still, pumps, storage tanks, etc.
  • Troubleshoots problems with equipment or processes.
  • Keeps production logs and records as required.
  • Keeps records of activities, production updates, concerns, corrective actions taken, etc.
  • Participates in operational and production meetings.
  • Performs Distillery opening and closing procedures.
  • As necessary, coordinates with other Museum departments to make Distillery space available for tours, presentations, VIP-access, etc.
  • Stays abreast of organizational and community happenings and is able to assist with the active promotion of upcoming programs and events.  
  • Participates in fostering an organizational culture that values innovation, promotes inclusion, and inspires excellence in the work environment.
  • Other duties as assigned.

Experience / Qualifications / Requirements:

  • Strong interest in craft beer manufacturing and spirit distilling.
  • Meticulous attention to detail.
  • Commitment to maintaining highest standards of cleanliness, food safety, and facility maintenance.
  • Ability to work independently.
  • Understanding of and ability to meet production deadlines.
  • Able to lift, push, or pull up to 50 pounds.
  • Able to stand for extended periods of time.
  • Must be over 21 years or older.
  • Able to work with brewery and distillery equipment.
  • Able to work in confined locations.
  • Able to tolerate and work effectively in areas with varying noise levels, dim lighting, moisture, and varying temperatures including within active alcohol production areas and within refrigerated spaces.
  • Able to work a varied schedule including holidays, evenings, and weekends.
  • Within 30-days of job placement, must obtain Alcohol Education Card, Food Handler’s Card, Work Card

Education:  High School Diploma or GED preferred.
